  • 2 ¼ cups (280 g) all-purpose flour
  • 2 ¼ tsp (1 packet) dry yeast
  • ¾ cup (180 ml) warm water
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil

For the Toppings:

  • 1 cup finely shredded cabbage
  • ½ cup mozzarella cheese (or more as preferred)
  • ½ cup cooked bacon or sliced pork belly (can use cooked shrimp as an alternative)
  • 2 scallions, thinly sliced
  • 1 egg (optional, cracked on top before baking)

For Garnish:

  • Japanese mayonnaise (Kewpie preferred)
  • Okonomiyaki sauce (or mix Worcestershire + ketchup + sugar)
  • Bonito flakes (katsuobushi)
  • Aonori (dried seaweed flakes), optional
  • Pickled ginger (beni shoga), optional

Instructions

1.   Prepare the Dough:

o   In a bowl, combine warm water, sugar, and yeast. Let sit until foamy (5–10 minutes).

o   Mix in flour, salt, and olive oil. Knead until smooth, about 8 minutes.

o   Cover and let rise in a warm place for 1 hour or until doubled.

2.   Preheat the Oven:

o   Preheat your oven to 475°F (245°C). If using a pizza stone, preheat it as well.

3.   Assemble the Pizza:

o   Roll out the dough into a 12-inch round on a floured surface and place on a baking sheet or peel.

o   Scatter shredded cabbage evenly over the base.

o   Add mozzarella, then top with cooked bacon/pork belly and scallions.

o   (Optional) Crack an egg in the center of the pizza if desired.

4.   Bake:

o   Bake for 12–15 minutes, or until the crust is golden and the cheese is bubbling.

5.   Garnish and Serve:

o   Drizzle generously with okonomiyaki sauce and Japanese mayo.

o   Sprinkle with bonito flakes and aonori. Add pickled ginger for extra zing if desired.

o   Slice and serve hot.
